Light Fluffy Almond Bread

I wanted to put an emphasis on light and fluffy! I have a few other breads posted but this one is the most like normal sandwich bread because I use yeast. You actually get the little air pockets in this bread that you do with regular bread. Now some of you might not be able to have yeast due to any gut problems in which case, check out my other bread recipes (under breads). I was glad this worked because I have never used yeast with Almond butter, so there may be more to come. I also am daring to say it might work well for french toast...I'll try it out and let you know!

Allergy Resume: Gluten Free, Sugar Free, Grain Free, Dairy Free and Primal

Ingredients:
1 1/2 cups Almond butter
4 teaspoons of Rapid rising yeast (in the little bags)
1 teaspoon Baking powder
1/2 teaspoon Baking soda
1 tablespoon Stevia powder
3 eggs

*This is the regular sandwich bread recipe, you can add different seasonings if you prefer a sweet or a savory bread.

Preheat oven to 375. Place almond butter and stevia in large bowl and mix well. Add yeast to bowl, cover and place in a warm spot (i put it in the oven on warm for a bit). Wait about 30 minutes for the yeast to sit. After 30 minutes add baking soda, powder and eggs mix well. The batter will be thicker than the other breads we have made, so don't be alarmed-- you're doing it right :-) Line a loaf pan with cooking grease and bake for 35-45 minutes or until a toothpick comes out clean. Let cool for 15-20 minutes and enjoy.

Cauliflower Flat Bread

I was so glad this worked out cause it is so versatile! This is a soft flat bread that can be rolled like a wrap or used as a piece of bread. I used it to make salmon tacos and they were DE-licious! This version is savory but I think converting it to a sweet flat bread would be pretty easy (think crepes!).

Allergy Resume: Primal, Sugar-free, Grain-free, and Gluten-free!

Ingredients:
1 cup pureed Cauliflower
3 Eggs
2 tablespoons Flax meal
1/4 cup Cheddar cheese (or your favorite cheese)
2 minced Garlic cloves
2 teaspoons Oregano
Salt and Pepper to taste

Preheat oven to 375F. Boil cauliflower until soft. Place in food processor and blend until smooth. Place cauliflower in bowl and add eggs and flax meal and mix well. Add cheese and spices to batter, again mixing well. Spread parchment paper over a cookie sheet and pour batter onto sheet. Smooth out batter into a thin sheet and and bake until browned-- about 25 minutes.

Harvest Herb Bread

This is a delicious substitute for your whole grain seed bread. Its great as toast with chutney or for a sandwich. I had a lovely ham sandwich with my homemade chipotle mayonnaise.

Ingredients:
1 cup Almond butter
2 Eggs
1/4 cup Sunflower seeds
2 tablespoons Flax meal
1 teaspoon Apple cider vinegar
1 teaspoon Baking soda
1 tablespoon Minced garlic
2 teaspoons Oregano
2 teaspoons Thyme
2 teaspoons Salt
2 teaspoons Pepper

Preheat oven to 350. In large bowl mix almond butter and eggs. In a small cup place flax meal and 1 tablespoon of water and let flax soak for a few minutes until it becomes a gel. When gel forms add to almond mixture. Chop sunflower seeds and add to almond mixture followed by thyme, garlic, oregano, salt and pepper, mix well. Lastly add cider vinegar and baking soda. Grease a small loaf pan and pour batter into pan. Sprinkle some sunflower seeds on top and bake bread for about 1 hour or until tooth pick comes out clean. Enjoy!

St Patty's Day: Hidden Leaf Muffins

I truly love holidays. Any excuse to celebrate life and enjoy it with delicious food. These healthy muffins sneak in some great vegetables that you wouldn't even know were there despite their color. I use veggie puree to add a green color instead of chemical dye-- it also adds vitamins and fiber. These muffins wont appear VERY green on the outside but will be green on the inside.

Ingredients:
3 tablespoons Finely chopped broccoli
3 tablespoons Pureed spinach
1/3 cup Flax meal
1/4 cup Almond butter (or meal)
2 tablespoons Milk (i used coconut)
1 1/2 teaspoon Apple cider vinegar
1 1/2 teaspoon Baking soda
1 1/2 tablespoon Cinnamon
1 tablespoon Stevia
3 Eggs

Preheat oven to 400. Finely chop or grate broccoli tops until 3 full tablespoons are prepared. Place spinach in food processor, make sure no large chunks remain and add to bowl with broccoli. Add flax meal and almond butter to mixture and mix well. Add egg, milk, cinnamon, and stevia to mixture. Last add apple cider and baking soda and mix thoroughly. Pour batter into muffin cups and bake for about 20 minutes, or until top of muffins begin to brown. Let cool and serve with butter or honey and enjoy!

Flourless, Nutless Bread....really

My two go to ingredients are: almond flour or white beans. The only downfall of beans is that you have to use corn starch, so its not grain free 100%, but it has a lot of other wonderful health qualities :-) This is an all purpose bread great for: toast, peanut butter and jelly-- all that normal eaters' stuff!

Ingredients:
1 1/3 cups Pureed white navy beans
2/3 cup Corn starch
2 Eggs
1 tablespoon Stevia
1 tablespoon Honey
1 teaspoon Baking soda
1 teaspoon Apple cider vinegar

Preheat oven to 350F. Combine beans, eggs, honey together and mix well. Next add stevia, corn starch, mixing again until smooth then add baking soda and apple cider vinegar. Pour batter into a parchment lined loaf pan and bake for 35-45 minutes or until tooth pick comes out clean. Let cool 30 minutes and enjoy!
